Garlicky White Bean Mash with Balsamic Mushrooms
This recipe is a bit of twist on a traditional Ukrainian dish served on Christmas Eve from Erin Walker of @alittlesaltblog. Featuring buttery Great Northern beans and loaded with garlicky flavour, this dish can be served as a side or main dish any time of year!

Ingredients
- 2 Tbsp (30 mL) canola oil
- 6 cloves garlic, peeled
- 1 tsp (5 mL) fresh thyme, finely chopped
- 2 large shallots, cut into quarters
- 8 cups (2 L) cooked Great Northern beans (see tips)
- 2 cups (500 mL) chicken broth (see tips)
- salt & pepper to taste
- 4 Tbsp (60 mL) butter
- 6 cups (1.5 L) cremini, white and/or shitake mushrooms, scrubbed & sliced
- 4 Tbsp (60 mL) balsamic glaze, divided
- 1/4 cup (60 mL) fresh parsley, chopped
Directions
In a large skillet over medium heat, add canola oil, garlic, thyme and shallots. Sauté until warm and fragrant, about 2 minutes.
Add beans and chicken broth, bring to a simmer and cook for 5 minutes.
Pour everything from the skillet into a blender or food processor and purée until smooth. Season with salt and pepper, to taste. Pour into a serving dish and cover until ready to serve.
Using the same skillet, melt butter and add mushrooms and a pinch of salt and pepper.
Sauté until mushrooms are very tender and dark in colour, about 10-15 minutes. Add half of the balsamic glaze (2 Tbsp/30 mL), and toss to incorporate, cooking for another 2 minutes.
When ready to serve, top the white bean mash with the sautéed mushrooms. Drizzle with remaining balsamic glaze and sprinkle with chopped parsley.
tips
Great Northern beans are the white bean grown in Alberta. You can substitute any other white bean like white kidney, cannellini, or navy beans.

You can also use canned white beans; a 19 oz/540 mL can, drained & rinsed will yield 2 cups cooked beans. For this recipe, you would need 4 (19 oz/540 mL) cans, drained and rinsed.
You can use vegetable broth instead of chicken broth to make this dish vegetarian.
