Sloppy Joe Sweet Potato Bowl with Smoky Black Beans & Avocado Crema
Is there anything better than a meal in a bowl? Load ‘er up with all the good stuff…iron, protein and fibre from the ground pork, black beans, and Greek yogurt combo! Fast, easy, and perfect for dinner this week.
2cups(500 mL) cooked or canned black beans, drained & rinsed (see notes)
Sloppy Joe Pork
1lb(454 g) lean ground pork
1/2largeyellow onion, finely chopped
1tsp(5 mL) chili powder
1/2tsp(2 mL) oregano
1/4tsp(1 mL) salt
2Tbsp(30 mL) tomato paste
1/2cup(125 mL) water
1/4cup(60 mL) ketchup
1tsp(15 mL) Dijon mustard
1tsp(5 mL) Worcestershire sauce
1tsp(5 mL) apple cider vinegar
Avocado Crema
1avocado
1/4cup(60 mL) full-fat plain Greek yogurt
juice of a lime
pinchof salt
water, to thin
To Serve
3cups(750 mL) coleslaw mix
1/4cup(60 mL) pickled onions or sliced pickles (see notes)
chopped fresh cilantro
Directions
Preheat the oven to 425°F (220°C).
Combine oil, sugar, and spices in a small bowl. Place sweet potato and black beans on a large baking sheet, drizzle with the oil-spice mixture and toss well to coat.
Spread sweet potatoes and black beans in an even layer. Transfer baking sheet to the oven and roast, stirring occasionally, until sweet potato is tender, about 25 minutes. Remove from oven.
Meanwhile, preheat a large, deep skillet over medium-high heat. Add pork, onion, and spices. Stir to combine, then cook, breaking apart the meat with a spoon, until browned and crumbly, 5-6 minutes.
Add tomato paste and stir to coat the meat, then add water, ketchup, Dijon, Worcestershire sauce, and apple cider vinegar. Stir to combine and bring to a simmer, then lower heat and continue to cook, 2-3 minutes, until sauce has thickened slightly. Remove from heat.
While the pork mixture cooks, blend avocado, Greek yogurt, lime juice and salt in a blender or food processor until smooth.
To serve, divide coleslaw mix between 4 bowls, then top with Sloppy Joe pork, sweet potatoes, beans, pickled onions or pickles, avocado crema and cilantro. Enjoy!
Notes
A 19 oz (540 mL) can of black beans, drained and rinsed, yields 2 cups (500 mL) cooked beans. To cook your own beans, check out our website for more info!
You can find pickled onions in the pickle and olive section at your local grocery store.
