Chocolate Black Bean Baked Oatmeal

Show your heart some love by adding black beans to your breakfast! Just add a dollop of yogurt and a handful of berries for a quick morning breakfast or dress it up with ice cream and chocolate drizzle for a decadent dessert!

Ingredients

  • 2 cups (500 mL) cooked or canned black beans, drained 7 rinsed (see notes)
  • 2 cups (500 mL) 1% milk
  • 1/3 cup (75 mL) ripe bananas
  • 1/4 cup (60 mL) maple syrup, or more, to taste
  • 1 tsp (5 mL) vanilla
  • 2 cups (500 mL) quick oats
  • 1/4 cup (60 mL) cocoa powder
  • 1 tsp (5 mL) baking powder
  • 1/2 tsp (2 mL) salt
  • 1/4 cup (60 mL) chocolate chips, plus more, for topping

Instructions

  • Preheat oven to 375°F (190°C). Line a 9”x 9” (23 cm x 23 cm) baking pan with parchment paper.
  • Add beans, milk and banana to a blender or food processor and blend until smooth. Alternatively, use a potato masher to mash to a smooth consistency. Transfer mixture to a bowl and add 1/4 cup (60 mL) maple syrup and vanilla. Stir well to combine.
  • In a small bowl, combine oats, cocoa powder, baking powder, and salt.
  • Gently fold the dry ingredients into the mashed bean mixture. Add chocolate chips and stir until just moistened. Taste and add additional maple syrup, if desired.
  • Pour the batter into the prepared pan and smooth to an even layer. Sprinkle additional chocolate chips or a small handful of oats on top, if desired.
  • Bake for 40-45 minutes or until the center is set. Remove from the oven and allow to cool for at least 10 minutes before slicing with a damp knife.
  • Serve with a dollop of yogurt, fruit and a drizzle of honey, or enjoy as a decadent dessert with a scoop of ice cream and a drizzle of chocolate sauce.

Notes

  • A 19 oz (540 mL) can of black beans, drained and rinsed yields 2 cups (500 mL) cooked beans.
