Ingredients
Dip Base
1cup(250 mL) cooked or canned white beans, drained & rinsed (see notes)
1Tbsp(15 mL) canola oil
1tsp(5 mL) Italian seasoning
1/2tsp(2 mL) garlic powder
1/4cup(60 mL) shredded Parmesan cheese
Pizza Layer
1/2cup(125 mL) your fave pizza sauce or marinara sauce
1cup(250 mL) shredded mozzarella cheese
Pizza Toppings
1cup(250 mL) total of your fave pizza toppings (see notes below for suggestions!)
Instructions
Preheat oven to 400°F (200°C) and grease a small, oven-safe baking dish or pie plate with non-stick spray.
Place the beans, oil, Italian seasoning, garlic powder and parmesan cheese into the bowl of a food processor.
Blend on high for 1 to 2 minutes until the mixture is completely smooth, creamy, and spreadable. If you don’t have a food processor, you can mash this layer with a fork. It will still have “texture” but that’s ok. You can add 1 Tbsp (15 mL) warm water if desired to help loosen the mixture for mashing.
Spread the bean mixture evenly across the bottom of the prepared baking dish using a rubber spatula.
Pour pizza sauce over the bean layer and gently spread it to cover the bean base.
Cover the sauce with the shredded mozzarella cheese, then scatter your favorite toppings over the cheese.
Bake for 15 to 20 minutes until the cheese is melted, bubbly, and golden brown around the edges.
Let it cool for 5 minutes before serving warm with crispy pita chips, garlic toast sticks, or tortilla chips.
Notes
White beans include navy, cannellini, white kidney and great northern beans.
SOME FUN PIZZA COMBOS:
The Classic Canadian - mini pepperoni slices, diced cooked bacon and sliced button mushrooms.
The Island Luau (Hawaiian) - diced ham or prosciutto and pineapple tidbits, patted dry so the dip doesn't get watery.
The Garden Party - diced green bell peppers, red onion, sweet corn kernels and sliced black olives.
