Five Ingredient Black Bean Soup

Ingredients

  • 1 can (19 oz/540 mL) no salt added black beans, drained & rinsed, divided
  • 2 cups (500 mL) salsa (see notes)
  • 1 cup (250 mL) reduced sodium vegetable broth
  • 1 tsp (5 mL) cumin
  • 1 tsp (5 mL) chili powder
  • salt & pepper, to taste
  • optional toppings include diced avocado, cilantro, sour cream, lime juice or finely minced red onion or you can add them all!

Instructions

  • In a large pot, combine 1 cup (250 mL) of the beans, salsa, broth, cumin and chili powder. Feel free to add any of your favourite spices as well. Stir everything together then bring to a boil.
  • Reduce heat and allow to cook for 10 minutes, stirring occasionally. Using an immersion blender, regular blender or potato masher, blend the soup until thickened.
  • Stir in the remaining beans and cook for 5 more minutes. Season to taste with salt and pepper. Serve warm with your favourite toppings and enjoy!

Notes

  • You can change the flavour of this soup with the salsa you use. If you like a spicier soup, use a medium or hot salsa. For less heat, use a mild salsa instead.
  • You can add any variety of spices to this soup like smoked paprika or a chipotle powder, garlic powder, etc.
