1can(19 oz/540 mL) no salt added black beansdrained & rinsed, divided
2cups(500 mL) salsa
1cup(250 mL) reduced sodium vegetable broth
1tsp(5 mL) cumin
1tsp(5 mL) chili powder
Directions
In a large pot, combine 1 cup (250 mL) of the beans, salsa, broth, cumin and chili powder. Feel free to add any of your favourite spices as well. Stir everything together then bring to a boil.
Reduce heat and allow to cook for 10 minutes, stirring occasionally. Using an immersion blender, regular blender or potato masher, blend the soup until thickened.
Stir in the remaining beans and cook for 5 more minutes. Season to taste with salt and pepper. Service warm with your favourite toppings and enjoy!
Notes
You can change the flavour of this soup with the salsa you use. If you like a spicier soup, use a medium or hot salsa. For less heat, use a mild salsa instead.
You can add any variety of spices to this soup like smoked paprika or a chipotle powder, garlic powder, etc.
Tasty toppings for this soup include diced avocado, cilantro, sour cream, lime juice or finely minced red onion or you can add them all!
