Lil’ Apple Bites

A kid friendly recipe that's great for snacking any time of day!

Ingredients

  • 3 Granny Smith apples, unpeeled & grated
  • 1/2 cup (125 mL) pitted prunes (about 8 prunes)
  • 1/2 cup (125 mL) hot water
  • 2 cups (500 mL) rolled oats
  • 1/2 cup (125 mL) pea butter, or other nut/seed butter
  • 1 Tbsp (15 mL) chia seeds
  • 1 tsp (5 mL) vanilla
  • 1 tsp (5 mL) ground cinnamon
  • 1/2 tsp (2 mL) ground nutmeg

Instructions

  • In a medium bowl, microwave grated apple for 90 seconds on high. Set aside to cool.
  • Soak pitted prunes in the hot water and let stand for 5 minutes.
  • Purée soaked prunes in a food processor until smooth.
  • Add puréed prunes, rolled oats, pea (or nut/seed) butter, chia seeds, vanilla, cinnamon and nutmeg to bowl with cooked apples. Mix with a wooden spoon until well combined.
  • Roll into 24 bites. Refrigerate in an airtight container for up to one week.

Notes

Cool dough in the refrigerator for 15 minutes after mixing. This will make it a little easier for little hands to roll!
