Lil’ Apple Bites

Ingredients
- 3 Granny Smith apples, unpeeled & grated
- 1/2 cup (125 mL) pitted prunes (about 8 prunes)
- 1/2 cup (125 mL) hot water
- 2 cups (500 mL) rolled oats
- 1/2 cup (125 mL) pea butter
- 1 Tbsp (15 mL) chia seeds
- 1 tsp (5 mL) vanilla
- 1 tsp (5 mL) ground cinnamon
- 1/2 tsp (2 mL) ground nutmeg
Directions
In a medium bowl, microwave grated apple for 90 seconds on high. Set aside to cool.
Soak pitted prunes in the hot water and let stand for 5 minutes.
Purée soaked prunes in a food processor until smooth.
Add puréed prunes, rolled oats, pea butter, chia seeds, vanilla, cinnamon and nutmeg to bowl with cooked apples. Mix with a wooden spoon until well combined.
Roll into 24 bites. Refrigerate in an airtight container for up to one week.
tips
Cool dough in the refrigerator for 15 minutes after mixing. This will make it a little easier for little hands to roll!
