Ingredients
1cup250 mL pea buttersee tips
1/2cup(125 mL) honey
1/2tsp(2 mL) cinnamon
1/2tsp(2 mL) vanilla
1 1/4cups(300 mL) dry oatmeal
1/2cup(125 mL) shredded coconut
1/2cup(125 mL) mini chocolate chips
Instructions
In a bowl, mix together pea butter, honey, cinnamon and vanilla until blended. Stir in oatmeal, coconut and mini chocolate chips. Refrigerate for 10 minutes. Take out of the fridge and roll into 36 (1-inch/2.5 cm) balls, using about 1 Tbsp (15 mL) per ball.
