Ingredients
- 1/2 - 1 cup (125-250 mL) cooked or canned chickpeas, drained & rinsed
- 1/2 cup (125 mL) diced fresh or frozen mango (see tips)
- 1/4 cup (60 mL) chopped fresh spinach
- 1 Tbsp (15 mL) finely diced white or red onion
- 1 Tbsp (15 mL) diced red or yellow bell pepper
- 2 Tbsp (30 mL) plain yogurt
- 1 tsp (5 mL) liquid honey (or less if desired)
- 1 tsp (5 mL) fresh lime juice
- 1/2 tsp (2 mL) chaat masala or garam masala seasoning spice or curry powder
- cooked chicken or skewered and grilled Paneer cheese
Directions
Combine chickpeas, mango, spinach, onion, pepper, yogurt, honey, lime and seasoning. Top with grilled chicken or Paneer skewers or both, if desired!
tips
- You can substitute apples or peaches for the mango.
- Frozen mango works just as well as fresh in this recipe and there’s no waste! Make sure the frozen mango is thawed completely before adding to the salad or the salad will become watery.
- Smoked paprika or chili powder can be used instead of the masala seasonings or curry powder.
My family and I made this salad on the weekend. It is beyond good!! It’s super flavourful. The bites of sweet mango with the savoury chickpeas and spinach is a perfect mouthful. And if you like more heat (like we do), you can chop in some jalapeño.
