Directions
Black Bean Spread: In the bowl of a food processor, pulse the garlic until finely chopped. Add the beans, adobo sauce, lime juice, cumin, salt, and cilantro. Process on high, scraping down the sides a few times throughout. With the food processor running, slowly add the olive oil in a thin drizzle. Thin with 1-2 tsp of water if necessary. The mixture should be a bit chunky and spreadable but not dry. Cover and refrigerate until ready to use.
Coleslaw: Whisk together vinegar, oil, sugar, garlic powder, onion powder, salt and pepper in a large bowl. Add cabbage and toss well until well-coated. Taste and season with more salt and pepper if necessary. Cover and refrigerate until needed.
Preheat the grill to medium-high heat.
Generously brush each mushroom with oil. Grill the mushrooms until softened, about 2-3 minutes per side. The mushrooms should still hold their shape.
To assemble the burgers, spread a layer of the black bean mixture on bottom of the bun then top with red pepper rings and lettuce, if desired. Add a grilled mushroom, top with coleslaw and top of bun. Feel free to add any other desired condiments and enjoy!
