Portobello Mushroom Burger with Chipotle Black Bean Spread

This delectable vegetarian entree pairs black beans with portobello mushrooms for a tasty meal for the whole family!

Ingredients

Black Bean Spread

  • 1 clove garlic, peeled
  • 2 cups (500 mL) cooked or canned black beans, drained & rinsed (see notes)
  • 2-3 tsp (10-15 mL) adobo sauce from a can of chipotle chili peppers in adobo
  • juice of a lime
  • 1/4 tsp (1 mL) ground cumin
  • 1/4 tsp (1 mL) salt
  • 1/4 cup (60 mL) cilantro leaves & stems
  • 1 Tbsp (15 mL) olive oil

Coleslaw

  • 2 Tbsp (30 mL) white vinegar
  • 1 Tbsp (15 mL) canola oil
  • 1 tsp (5 mL) sugar
  • 1/4 tsp (1 mL) garlic powder
  • 1/4 tsp (1 mL) onion powder
  • 4 cups (296 g) shredded red cabbage
  • salt & pepper, to taste

Burgers

  • 6 large portobello mushrooms, washed & stems removed
  • 1-2 Tbsp (15-30 mL) canola oil
  • 6 hamburger buns
  • 1 red bell pepper, seeded & sliced into rings, if desired
  • butter lettuce, if desired

Directions

Black Bean Spread

  • In the bowl of a food processor, pulse the garlic until finely chopped. Add the beans, adobo sauce, lime juice, cumin, salt, and cilantro. Process on high, scraping down the sides a few times throughout. With the food processor running, slowly add the olive oil in a thin drizzle. Thin with 1-2 tsp of water if necessary. The mixture should be a bit chunky and spreadable but not dry. Cover and refrigerate until ready to use.

Coleslaw

  • Whisk together vinegar, oil, sugar, garlic powder, onion powder, salt and pepper in a large bowl. Add cabbage and toss well until well-coated. Taste and season with more salt and pepper if necessary. Cover and refrigerate until needed.

Burgers

  • Preheat the grill to medium-high heat.
  • Generously brush each mushroom with oil. Grill the mushrooms until softened, about 2-3 minutes per side. The mushrooms should still hold their shape.
  • To assemble the burgers, spread a layer of the black bean mixture on bottom of the bun then top with red pepper rings and lettuce, if desired. Add a grilled mushroom, top with coleslaw and top of bun. Feel free to add any other desired condiments and enjoy!

Notes

  • A 19 oz (540 mL) can of black beans, drained & rinsed yields 2 cups (500 mL) cooked beans. To cook dry beans, check out our website for more info!
