1 1/4cups(300 mL) cooked or canned white beans, drained & rinsed (see notes)
1/4cup(60 mL) water
1tsp(5 mL) low sodium bouillon granules, chicken or vegetable
1/4cup(60 mL) Parmesan cheese, grated
1French baguette, cut into 24 - 1/2-inch (1 cm) slices
Directions
Heat oil in a skillet over medium heat. Add green onion, garlic and sage and cook for about 2 minutes.
Add beans, water and bouillon and cook until liquid is slightly reduced, about 5 minutes. Add cheese and cool to room temperature.
Place bean mixture in a blender or food processor and blend until smooth, adding additional water 1 Tbsp (15 mL) at a time until desired consistency is reached.
Place sliced bread on a baking sheet and broil until golden, about 1 minute on each side.
Spread about 1 Tbsp (15 mL) of bean mixture on each slice and serve!
Notes
White beans include Great Northern, white kidney, navy or cannellini beans.
