Lentil Tabbouleh Salad

This quick and tasty salad is easy to make! Add some naan or pita to complete the meal.

Ingredients

Salad

  • 1 1/4 cup (300 mL) cooked lentils or 1 can (14 oz/398 mL) lentils, drained & rinsed
  • 1 cup (250 mL) diced red bell pepper
  • 1/2 cup (125 mL) diced green bell pepper
  • 1/2 cup (125 mL) diced cucumber
  • 1/2 cup (125 mL) diced celery
  • 6 green onions, thinly sliced
  • 1/2 cup (125 mL) crumbled feta cheese

Dressing

  • 2 Tbsp (30 mL) chopped fresh dill
  • 1/4 cup (60 mL) fresh lemon juice
  • 1 Tbsp (15 mL) canola oil

Directions

  • Place salad ingredients in a large bowl.
  • Combine dressing ingredients in a small bowl or measuring cup then pour over salad and toss to combine. Serve with soft pita or naan and enjoy!

A good filling meal.
