Lentil Tabbouleh Salad

A quick and tasty salad to complement any meal!

Ingredients

    Salad

  • 1 1/4 cup (300 mL) cooked lentils or 1 can (14 oz/398 mL) lentils, drained & rinsed
  • 1/2 cup (125 mL) cucumber, diced
  • 1/2 cup (125 mL) celery, diced
  • 1/2 cup (125 mL) green bell pepper, diced
  • 1 cup (250 mL) red bell pepper, diced
  • 6 green onions, thinly sliced
  • 1/2 cup (125 mL) feta cheese, crumbled
  • Dressing

  • 2 Tbsp (30 mL) fresh dill, chopped
  • 1/4 cup (60 mL) fresh lemon juice
  • 1 Tbsp (15 mL) canola oil

Directions

Place salad ingredients in a large bowl.

Combine dressing ingredients then pour over salad and toss to combine. Serve and enjoy!
