In a bowl, mix together pea butter, honey, cinnamon and vanilla until blended. Stir in oatmeal, coconut and mini chocolate chips. Refrigerate for 10 minutes. Take out of the fridge and roll into 36 (1-inch/2.5 cm) balls, using about 1 Tbsp (15 mL) per ball.

We like to bake these and other cookies with No Nuts pea butter but can’t find it anywhere anymore. Do you have alternatives? (Or I’m hoping it will be back in stores soon.)
Thanks for your question. We loved the pea butter, too! There are changes taking place at the processing plant which is impacting the production of this product. We’re not sure if it will be back in stock, but you can use regular peanut butter or any other nut/nut free butter for this recipe. If the nut butter is quite thin, you may need to add more oatmeal and or coconut to thicken the mixture enough to roll.
